Specialty Diet Day!!!!

It is no secret that I am big into health foods and keeping a healthier diet. Unfortunately not many people in my class agree with me on that completely.

Gluten Free Chocolate Chip Cookies-
Unlike my fail yesterday with chocolate chip cookies, these turned out beautifully and made the cut to be sold later. To be honest I have no idea what I did differently besides sub more brown rice flour in place of tapioca starch. They were crunchy and soft at the same time and pretty dang good for a gluten free cookie.

Gluten Free Yeast Bread-
Basically a jiggly, salty, rice flavored sponge. It was horrid. I have never been impressed with gluten free breads. Other things yes, but this bread was a great example of how some food items cannot be created without the key ingredient. Bread without gluten hardly counts as bread.

Vegan Orange Chocolate Bars-
Oh my gosh so good! These turned out really well! I honestly would change these at all. They were perfect and not overly sweet. Vegan food is the best!

WHAT I LEARNED:
Maybe it is my destiny to cook specialty diet food. For some reason it turns out so much better than anything I could make otherwise. But in all seriousness. I learned that replacing wheat with gluten free choices does not guarantee the same result. Nope it's totally different!
