FINAL for the baking course! Today we had a prep day for the end of semester final. After practicing the crème anglais, chocolate chip cookies, soft rolls, and peach pie, I learned a few things. The best way to get everything done quickly is to make the dough for the rolls, make the cookies start to finish, knead the soft roll dough, make the pie crust and chill it, make the pie filling and chill it. Make crème anglias while the pie chills and the soft rolls develop. Then, make your pie and bake it. While the pie is baking, cut and measure the rolls and put in proofer. Bake when ready. The trick is to do it all quickly!!!!

Honestly... This final did not go as planned... It was an absolute nightmare because I burned my chocolate chip cookies twice and made them three times!! The third time around they were almost perfect but Under-cooked the last time around. I just about exploded. Everything else went moderately well and I felt relieved that it was over. The main lesson I learned throughout this day was to be very careful about how long your cookies may be in the oven... the instructions may say 10-14 minutes but there is a good chance they will burn before you hit even 8 minutes. That happened to me.
