Fried Eggplant!!
Oh my gosh this stuff is so good!!
Even though my stomach killed after eating all that I did, I really enjoyed practicing another mother sauce and applying it to a pan fried vegetable. I think a pesto sauce would have been an amazing alternative.
Minestrone-
It was really fun to practice a new soup! I especially love vegetable soups because it gives you an opportunity to appreciate the flavor they give to the soup and you aren't distracted by the meat. I don't think I would change anything about this Italian classic but I would always top it with a little Parmesan.
WHAT I LEARNED:
One of the most important things that you need to do when pan frying, is strain the oil between uses. If the oil isn't cleared of residual breadcrumbs or batter then they will burn and ruin the oil and stick to the food. The result is little black bits stuck to the golden brown fried item.
