This was quite the day!! I was overall very impressed with the level of class and professionalism that we use when we are doing catering events. I learned so many things. One of the biggest things is that we make a big show out of food preparation so that the consumers feel included and aware of our "efforts". I learned that presentation is everything because it is what the customers will base thier opinions and references off. If we serve terribly assembled food, it will not be appealing and will not have the effect of a special occasion. It is also very important to stay organized and roll with whatever curve balls go your way during the event.
